For starters, and as Dave implied, don't worry about being painfully honest. Some women actually love it. I get taken on shopping trips with women all the time because I'm not afraid to tell them if they look ugly or fat in a certain outfit. Sometimes, burns can also be funny. It takes a good sense of dry humor in order to execute it though.
What most people mean by your opening is that you should stand strong for your own beliefs. No matter what happens, don't let anybody else change them. The "let it slide" part applies to other people. If someone else challenges your beliefs, or they don't agree with them, so what? They're your beliefs, and if they continue to question them further, that's when you turn the tables on them.
