(is there a) Possible next move?

Met this girl about three months ago at a club. Danced/grinded with her bit and added her to fb a few days later. After small talk on fb and texting we finally met up three weeks later for a 1 hour coffee date late after my evening class. No Kino or anything, just conversation and a hug goodnight after i walked her home (she lives pretty close to me).

Tried to set up a second date for about a month but she'd make excuses every time until she finally told me that she's been in two LTR for the past 6 years and was looking to be single for a while. She said she doesn't think it'd be a good idea to see me because we met at a club and as a result she thinks I'm looking for something more while she isn't looking to get into anything right now. She's down to bump into each other at clubs when she's with her friends, and i'm with mine. But like i said, she doesnt want any one on one. I basically thought to myself "f-it" and haven't talked to her since.

I know i shouldn't waste anymore time on her and I dont plan to, but what would you suggest I do if i wanted to try and repair this as a sort of side project while i carry on meeting other women and going about life. I like her and also see this as sort of a fun challenge. It was her that came up to me at the club so I know she finds me attractive. I think I may have over texted her in regards to setting up date #2 and made her lose interest.
