How does the adult dating world work?

Hi,

So I'm fresh out of high school and just starting my adult life, and one thing that I've noticed already is that dating is completely different! In high school you dated/were interested in only 1 person at once, and once you kissed that was pretty much it, or you said will you be my girlfriend, but now that I'm out of high school none of that seems to apply! So, can anyone explain how it works? I'm so confused...
