K, Just stumbled on this post and think I might be able to help you out. I think that learning to dance to pick up a specific chick is pretty AFCish, but learning to dance is an awesome way to boost confidence and meet people. I'm actually a professional ballroom dance instructor and go salsa dancing every week. As far as impressing a girl dancing, you have to understand a few things about the psychology of partner dancing.
Men are to be the frame where the ladies are to be the picture... which means you don't have to be a great dancer, you have to show off the partner you're dancing with. I have seen guys in the clubs who the women flock to who do nothing but cross body leads with a variety of underarm turns and dips. These are just intermediate steps and the guys are doing nothing spectacular but girls do love to turn, spin, and be shown off on the dance floor.
-Confidence is a huge factor... first, if you botch a step, especially if she looks at you funny, you need to return a look that expresses something like 'I can't believe that you couldn't follow that!' or 'What are you doing?'... Never get caught saying 'My bad or Oh, I just screwed that one up.'
-Look like you can dance. The biggest differences that will be seen between a beginner and an advanced dancer is the size of steps, the type of posture, and head position. Stand up straight and quit looking down... especially at your feet. I teach my students to hold their heads up so it feels like their jawline is parallel to the floor. When I'm dancing latin dances my steps are so small that my feet almost never clear (in front or behind) each other in the basic steps, intermediate steps are a different case, but that's more show material than things you will see in a club. Smaller steps allow you to move faster and have better hip motion and style. There are plenty of beginning level salsa videos on youtube if you want to learn some more patterns, but I'm not very impressed with most of them and youtube is hard to learn from if you don't have at least a fair understanding of dance. You may have better luck seeing if any of you local libraries have and DVD's you can check out.
Lastly, even if the girls sucked, I always let them know how much fun it was to dance with them. Be careful as to not come across as overly complimentary as they may feel that you are expressing that you think that they are a better dancer than you. You want to make them feel that you can follow your leads great which makes them look great on the dance floor. After you thank them and let them know how fun it was, turn and walk away. Don't come across as needy when dancing, there's always more people to dance with and you can ask her again later. Frequently, I will have a girl come back to me a few songs later and almost drag me back to the dance floor with them.
Just like any other type of game, there is an need for DHV. If you take responsibility for every rough step and you look like your chasing after this HB9 all night instead of just having a great time where you're at you are not going to be the guy that she's wanting to leave with.
