*** UPDATE ***
I am the luckiest man I've ever met.
Instead of going into the "romantic crap" of my first plans... I followed Xavier's and whitedragon's suggestions and Yesterday I decided to call her and get her to share a coffee with me. She didn't answer the phone when I called her at work (she doesn't have a cell and I wouldn't dare call her at home with her BF around).
So I sent an email where I said something like:
I think I gave you enough time to cool down emotionally hehe
Right now, I want to share a coffee with my favorite (insert her name here). Do you have one of these rare moment of freedom this weekend or next week?
Give me some news!
She wrote me back today.
"Hey! What do you want to do? I'm free both Sat and Sun. We'll have a brunch or we go take a walk on the mountain? I need some time out! I need some fresh air!

And so we organised a little walk next Sunday that should last a few hours. I will bring a small bottle of wine and a tiny lunch that we will share. I am really happy about how things turned out - the way she responded was way more positive than I ever expected. At the same time, though, I am not getting overly excited so I don't screw everything up. I am aware that THIS IS MY CHANCE. I'm studying Whitedragon's post so that my Mindset will be on the spot. I'll try to gauge her and do what I have to do to win her heart.
At the same time, I will enjoy every minute of it and make sure she has a hell of a good time!
